Sirārakhong Hāthei Chilli Powder
Proudly grown by a cooperative of farmers in Sirārakhong, legend has it that the villagers' ancestors found these exquisitely long, vibrant chiles growing in the wild on a hunting trip, brought them home, and made them a part of their daily cuisine ever since. Many nearby villages have tried to grow the Sirārakhong Hāthei chiles, but something about the terroir of Sirārakhong produces the very best of the best.
Diaspora Co.'s recipe editor, Asha, says that these long, brick-red chiles are smoked on bamboo mats in the field right after harvest and "are umami-rich, with deep notes of bacon, oak, and whiskey, and a medium heat." This powder adds a deep, smoky heat and would make a great substitution for smoked paprika in your dishes.
