Kashmiri Chilli Powder
From seed that has been passed down for generations, this Kashmiri chile is grown by the Farukh family on their ancestral land in Pulwama in the Kashmir Valley of India. This is true Kashmiri mirch (chile pepper powder) - hot as ever, and with that deep scarlet color and heat that iconic Kashmiri dishes like Rogan Josh are known for.
Diaspora Co.'s recipe editor, Asha, says that these chiles "bring the flavor on so many levels, with sweet notes of prune and pineapple, a touch of bright acidity (hello, citrus aroma!), and a whisper of rich salinity akin to tamari, plus a medium-to-hot heat that will sneak up on ya." Asha also advises that the chile's gentle, fiery kick makes it a great substitute for hot paprika in recipes.
